I am back again! August was not a good month for me as I had four falls within two weeks. But I am feeling better and walking better. Thank goodness!
School is back in session and football, and your fall sports are being played. This beautiful weather we have been having I absolutely love! I love cool evenings and sunny warm days.
My leaves are already curling up on the edges and some have started to turn color and fall on the ground. My favorite season and then Winter and snowy days and cold weather which I also like!
The recipes I have for you today are great to make for the kids to eat when they get home from school.
The first recipe is for Frito Bars. These are a salty and sweet bar that requires no baking, and they are delicious!
The next recipe is for brownies that everyone likes but you bake them in regular muffin pans so they turn out crispy on the outside and chewy on the inside! I can smell them right now!
The next recipe is for No-bake Lemon Oatmeal Cookies. There is only Three ingredients and very easy to make and let chill for only 1 hour and you are ready to start eating.
The last recipe is Strawberry Cheesecake Dump Cake. This cake recipe is so easy, and I think it would be good with different kinds of pie filling like blueberry, peach, blackberry, apple, cherry. I will definitely be trying other flavors in this recipe.
Next month is time to get ready for Halloween so I will have recipes to help you get ready.

Frito Bars
1 – 9.25-ounce bag of Fritos
1 cup peanut butter regular or crunchy
1 cup sugar
1 cup corn syrup
Spray a 13×9 pan or dish with cooking spray. Spread the Fritos evenly in the prepared baking dish.
In a saucepan over medium heat, combine the peanut butter, sugar and corn syrup. Stir until the ingredients are melted and well combined.
our the peanut butter mixture over the Fritos in the baking pan and stir until well mixed.
Refrigerate until set. Cut into squares and enjoy!
Brownies – Crispy and Chewy – Cupcakes
I always whip up brownies in muffin pans because they turn out crispy and chewy on the inside. No more fighting over the corners.
2 boxes of brownie mix making 24 brownie cupcakes.
Add to back of box directions – 1 extra egg for extra gooeyness.
Spray the pans really well with nonstick spray and they will pop out easily with a butter knife. Bake them at 350 degrees for 20 minutes and let them cool for 5 minutes before you take them out of the pans. Enjoy!
No-Bake Lemon Oatmeal Cookies
1 cup of white chocolate chips
2 tablespoons lemon juice plus 2 teaspoons lemon zest
½ cup plus 2 tablespoons quick oats
Melt white chocolate in intervals then whisk in lemon juice. Stir in zest and oats until thick batter forms. Scoop and shape cookies on parchment paper.
Chill or 30 minutes to 1 hour until set.
Quick cookies that are refreshing and delicious!
Strawberry Cheesecake Dump Cake
1 box of yellow or white cake mix.
1 – 21 ounce can strawberry pie filling
1- 8-ounce package cream cheese, softened
½ cup white sugar
1 teaspoon vanilla extract
½ cup butter, melted
Preheat oven to 350 degrees and grease a 13×9 pan or baking dish. Spread the Strawberry pie filling evenly on the bottom of the pan.
In a bowl beat together cream cheese, sugar, and vanilla until smooth. Dollop the cream cheese mixture over the strawberry filling and gently spread. Evenly sprinkle the dry cake mix over the top- DO NOT MIX!
Drizzle melted butter evenly over the cake mix. Bake for 40-45 minutes or until the top is golden and bubbly. Let it cool slightly before serving. Enjoy warm or chilled. Creamy, fruity and buttery, this Strawberry Cheesecake Dump is the easiest dessert you will ever make!
*Any flavor of pie filling could be used in this recipe – apple pie filling, peach pie filling, cherry pie filling, berry pie filling.
