Happy Fall, you all! I have thoroughly enjoyed the warm days and cool nights. I have been trying to decorate for fall and I have to admit that fall is my favorite season.
I love the leaves turning colors, the smell of the woods, cool crisp mornings and generally I feel not so rushed, more laid back! I am starting to feel better, but it has taken me awhile.
But every day I make a list of “things to do” and I mark off when I complete that job and at the end of the day, I make the next day’s list and move whatever I didn’t get done from the previous day.
I do this every morning, 7 days a week, so I can keep on track and get things done. I am definitely a list maker but that is how I get things done.
The recipes I have for you this month will definitely get you in the mood of fall.
The first recipe is Meatball Mummies. The whole family will enjoy these. The Spooky Meatball Mummies are definitely a big hit and very tasty.
The Caramel Cookies are a no bake version and you use instant butterscotch pudding mix. Something different to try!?!
The Italian Bread Sloppy Joes are a must try and the whole family will dive into this supper! Using a loaf of Italian bread, making sloppy joes and topping with cheese. This recipe would be great for tailgating party or even a birthday to serve.
The last recipe is for a dish I threw together. I was skeptical at first but I loved all the ingredients that was listed so I made it and it was delicious! This is a must try!

Smoked Sausage Dinner
One Pan Meal
1 medium onion chopped
½ stick butter cut in slices – add more if needed
1 ring of smoked sausage – cut into slices
1 can green beans- drained
Salt and pepper to taste
Granulated garlic to taste
In a deep frying skillet add butter and let melt on medium heat. Dice onions and put in first.
Then add Cut smoked sausage in chunks or slices however you prefer. Then add diced potatoes. Let all these ingredients brown up until potatoes are fork tender.
Then add drained green beans last. Season with salt, pepper, garlic powder.
Cover and stir occasionally. Enjoy!
Italian Garlic Bread
Sloppy Joes
BREAD:
1 loaf of Italian bread
½ cup butter, softened
1 teaspoon garlic salt
SLOPPY JOE:
1 pound of ground beef
¼ cup onion, chopped
½ teaspoon garlic powder
1 teaspoon yellow mustard
¾ cup ketchup
½ teaspoon salt
¼ teaspoon black pepper
½ cup water
TOPPING;
1 cup mozzarella cheese, shredded
1 cup sharp cheddar, shredded
Parsley to garnish
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Slice the loaf of bread lengthwise into two halves. Place both halves of the bread onto the lined baking sheet, cut side up.
In a small bowl, combine the butter and garlic salt and spread the butter mixture over the cut sides of the bread. Set aside while you make the sloppy joe filling.
In a medium non-stick skillet over medium heat, cook the ground beef and onions until the beef is no longer pink – 8-10 minutes. Drain grease and stir in garlic powder, mustard, ketchup, salt and pepper and water, mixing until combined.
Divide the sloppy joe mixture between both sides of the loaves and top with the mozzarella and cheddar cheese.
Bake for 12-14 minutes or until golden brown. Cut into pieces and serve with parsley for garnish.
Caramel Cookies
2 cups sugar
¾ cup butter
2/3 cup evaporated milk
1 small box instant butterscotch pudding mix
½ teaspoon vanilla
3 cup oats
In a saucepan, mix together sugar, butter, and milk. Bring to a boil stirring frequently. Once boiling DO NOT STIR allow to boil for 1 minute.
After boiling remove from heat and mix in instant pudding mix and vanilla till everything’s combined.
Mix in oats until everything’ s combined. Use a cookie scooper or teaspoons to scoop and put on a parchment paper lined baking sheet.
Allow caramel cookie s to cool and set up a few minutes before enjoying.
Meatball Mummies
1 pound lean ground beef
¼ cup breadcrumbs
¼ cup parmesan cheese
1 egg
½ teaspoon Italian seasoning
½ teaspoon minced dried onion
½ teaspoon garlic powder
8-ounce crescent roll dough
Candy eyes
Marinara sauce for dipping
Preheat oven to 350 degrees. Mix ground beef, breadcrumbs, parmesan cheese, egg, Italian seasoning, onion, and garlic powder in a bowl.
Separate meat into 8 portions and roll in logs and bake or pan fry until partially cooked.
Slice crescent roll dough into long strips. Wrap dough strips around meatball, leaving space for eyes.
Bake for 12-15 minutes until dough is golden brown. Use marinara sauce to attach candy eyes while warm. Serve with marinara sauce for dipping.
TIPS: Use a sharp pizza cutter to cut dough strips, and you can swap ground beef with other meats or use premade meatballs. Have fun making these spooky Meatball Mummies!!!!!
